  • No:12357 *避免隔餐食用饭菜最好当餐烹调、当餐食用。假如烹调时维生素会流失20%,立刻吃的话,还可以摄取80%的维生素。一旦经过保温或冷藏,都会使维生素再流失,而且放得越久流失越多,隔餐食用时又要再加热一次,菜肴里的维生素和其他营养素都会越来越少。
    *怕冷的维生素勿冷冻存放维生素E很怕冷,所以保存富含维生素E的食物,如坚果类、沙拉油等,千万不要冷冻!

    *含维生素A的食物最好快炒富含维生素A的食物,如胡萝卜,最好加油快炒,会比生吃更营养。

    *含维生素C适合生吃富含维生素C的蔬果最好能够生吃,或者烫一下就好。

    *青菜不要用烫的具有抗癌酵素的青菜(如花椰菜、青花菜、甘蓝菜等十字花科的蔬菜),最好用蒸的、炒的,或者微波,就是别用水煮的,以免破坏其内含的抗癌酵素,至于其他的蔬菜以水煮方式烹调,也较易使其中的维他命C和叶绿素流失,因此,即使真的想吃水煮的青菜,也要尽可能地缩短水煮的时间。
